YYYYUUUMMMYYY!!!!!!!!!!! and GO WINGS!!!!!!!!!!
Ahh another great recipe from The Gluten Free Vegetarian Kitchen. We had Mexican stuffed zuchinni.
It’s another beautiful day in Texas. Man on man I love it here. The weather rocks and the blue skies don’t suck! I love these 90 degree days and am despising the air conditioning. Of course I am sure I will love it once the temperature goes above 110! The only other place that comes close to Austin is Boulder(Denver). Sure it snows in Boulder but there are 300+ days of sunshine and that includes right after a snow storm.
Tonight is muffins with moms at Noah’s school. I subbed today for another kindergarten teacher. They are so cute but I am so cut out for middle school. I had one little girl cry 3 times. I can understand that at the beginning of the year but holy cow. When I mentioned someone had cried in class to Noah he knew exactly who it was. LOL
I am going to write a whole write up on Lost. I have a lot of Theories I would like to bounce off you all. Got the Wings game and Grey’s finale then I can write more.

Nicole,
I would love that recipe. My little sisters boyfriend cannot have gluten
If he is a vegetarian or ust likes the food this is a GREat cookbook.
3 large zucchini, trimmed and halved lengthwise
1 TBSP. olive oil
1 medium red pepper chopped
3 scallions(greens and whites)
2 cloves garlic finely chopped
1 cup cheese(mont. jack/cheddar)
2 TBSP cilantro finely chopped
1 small jalapeno chopped
Salt pepper to taste
Heat oven to 350
fill a big bowl with ice water
lightly oil a baking dish
boil zucchini just til tender 2-3 min then plunge into ice bath for 5 min. remove and dry well. Scoop out pulp and store in a bowl. Dry the pulp and coarsely chop the pulp.
in saucepan heat oil and cook red pepper, scallions, and garlic for about 5 min. remove from heat and cool a few minutes.
Add that mixture to the zucchini pulp, half the cheese, cilatro, jalapeno, and salt and pepper. Toss well to combine Stuff into the zucchini shells. place in prepared baking dish and cook for 20 minutes. Top with the other half of cheese a few minutes before it is done.
I smothered mine with salsa verde and sour cream. I like a hot green salsa!
Thank you so much Nicole. My little sister is a trooper and is always looking at ways to feed her man! It is difficult because like you he has the Cieslak disease. He actually has started drinking Gluten free beer (learned about this from your website)!
